Steps
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken breast with salt, pepper, and oregano.
3. Cook the chicken breast for about 5-6 minutes on each side until golden brown and cooked through.
4. Remove the chicken and set aside.
5. In the same skillet, add the minced garlic and sauté for 30 seconds.
6. Add the diced tomatoes and cook for 3-4 minutes until slightly softened.
7. Stir in the fresh basil leaves.
8. Return the chicken to the skillet, spoon some tomato mixture over it.
9. Sprinkle mozzarella cheese on top if using, cover and cook for another 2 minutes until cheese melts.
10. Serve hot, garnished with extra basil if desired.
