Steps

1. Preheat oven to 350°F 2. Cut the bell pepper in half, lengthwise and remove the seeds. 3. In a bowl, mix together the brown rice, kidney beans, onion, cumin, oregano, salt and pepper. 4. In a large skillet, heat the olive oil over medium-high heat, then add the rice mixture to the skillet and cook until lightly browned, stirring occasionally. 5. Divide the rice mixture, and scoop it into the two bell pepper halves. 6. Sprinkle the cheese over the top of the bell peppers. 7. Place bell pepper halves in a baking dish, and bake in the preheated oven for 25 minutes. 8. Serve warm.
