Somali Chicken and Rice (Bariis Iskukaris)

Steps

1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. 2. In a pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. 3. Add the garlic and ginger, and continue to sauté for another minute. 4. Stir in the diced chicken and cook until browned on all sides. 5. Add the cumin, coriander, turmeric, salt, and pepper, stirring well to coat the chicken with spices. 6. Drain the soaked rice and add it to the pot, stirring to combine. 7. Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and liquid is absorbed. 8. Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
