Steps
1. Preheat the oven to 375°F (190°C).
2. Season the chicken breast with salt and pepper.
3. Heat olive oil in an oven-safe skillet over medium-high heat.
4. Sear the chicken breast for 2-3 minutes on each side until golden.
5. Remove from heat and brush the top of the chicken generously with jelly.
6. Transfer the skillet to the oven and bake for 15-20 minutes until chicken is cooked through.
7. While chicken bakes, mix salad greens, basil, parsley, lemon juice, balsamic vinegar, salt, and pepper in a bowl.
8. Remove chicken from oven and let rest for 5 minutes.
9. Serve the jelly-glazed chicken alongside the fresh herb salad.
