Roasted Chicken with Grape and Thyme Sauce

Steps

1. Preheat the oven to 375°F (190°C). 2. Season the chicken breast with salt, pepper, and half of the thyme. 3. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken breast for 3-4 minutes on each side until golden brown. 4. Transfer the skillet to the oven and roast for 15 minutes or until the internal temperature reaches 165°F (74°C). 5. Remove chicken from skillet and keep warm. 6. In the same skillet, add shallots and cook over medium heat until soft. 7. Add grapes and remaining thyme, cooking for 2 minutes. 8. Pour in chicken broth and simmer until sauce thickens slightly, about 5 minutes. 9. Return chicken to the skillet to coat with sauce. 10. Serve chicken topped with grape and thyme sauce.
