Steps
1. Cook the whole grain penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
2. In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, and crumbled feta.
3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
4. Pour the dressing over the pasta mixture and toss gently to combine.
5. Garnish with fresh parsley and serve chilled or at room temperature.
