Steps
1. Preheat a grill pan or outdoor grill over medium heat.
2. Brush the chicken breast with olive oil and season with salt, pepper, and dried oregano.
3. Grill the chicken for about 5-6 minutes on each side, or until fully cooked and juices run clear.
4. While the chicken cooks, prepare the salad by combining cherry tomatoes, cucumber, olives, red onion, feta cheese, and mixed greens in a bowl.
5. Once the chicken is cooked, let it rest for a few minutes, then slice it thinly.
6. Add the sliced chicken to the salad.
7. Drizzle the salad with fresh lemon juice and a little more olive oil if desired.
8. Toss gently to combine and serve immediately.
