Steps
1. Preheat the oven to 200°C (400°F).
2. Peel and cube the beetroot, toss with half the olive oil, salt, and pepper, then spread on a baking tray.
3. Roast the beetroot in the oven for 25-30 minutes until tender.
4. While the beetroot roasts, slice the onion thinly.
5. Heat the remaining olive oil in a pan over medium heat, add the onion, and cook slowly until golden and caramelized (about 15 minutes).
6. In a separate pan, cook the pea protein sausage according to package instructions or until browned and heated through.
7. Once the beetroot is done, drizzle with balsamic vinegar and sprinkle fresh thyme if using.
8. Plate the sausage with roasted beetroot and caramelized onions on the side.
9. Serve warm and enjoy.
