Steps

1. Pat the mackerel fillet dry with paper towels and season both sides with salt and pepper. 2. Heat olive oil in a non-stick pan over medium-high heat. 3. Place the mackerel fillet skin-side down in the pan and cook for 4-5 minutes until the skin is crisp and golden. 4. Flip the fillet and cook the other side for 2-3 minutes until cooked through. 5. In a small bowl, mix minced garlic, chopped parsley, and lemon juice. 6. Remove the fillet from the pan, spoon the lemon herb sauce on top, and garnish with a lemon wedge. 7. Serve immediately with your choice of side.
