Mushroom Risotto

This is a creamy and cozy mushroom risotto, full of earthy flavors.

Steps

Step 1: Heat the olive oil in a large saucepan over medium-high heat. Step 2: Add the onions and garlic, and cook until the onions are translucent. Step 3: Add the mushrooms and cook until they are lightly browned. Step 4: Pour in the white wine, and simmer until it is almost evaporated. Step 5: Add the rice and Italian seasoning, stir to coat the rice. Step 6: Gradually add the vegetable broth, stirring until the rice is tender and creamy. Step 7: Remove the saucepan from the heat, and stir in the parmesan cheese and thyme.
