Lemon Herb Roasted Chicken

Steps

1. Preheat the oven to 375°F (190°C). 2. In a small bowl, mix together the minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and pepper. 3. Pat the chicken dry and rub the herb mixture all over the chicken, including under the skin. 4. Place the sliced lemons inside the cavity of the chicken. 5. Tie the legs together with kitchen twine and place the chicken on a roasting rack in a roasting pan. 6. Roast the chicken for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer. 7. Let the chicken rest for 10 minutes before carving and serving.
