Steps

1. Preheat oven to 425°F (220°C). 2. Toss potato chunks with half the olive oil, salt, and pepper. 3. Place potatoes on a baking sheet and roast for 10 minutes. 4. Meanwhile, rub chicken thigh with remaining olive oil, garlic, rosemary, thyme, salt, and pepper. 5. After 10 minutes, add the chicken thigh skin-side up to the baking sheet with potatoes. 6. Roast together for 30-35 minutes, until chicken is cooked through and skin is crispy, potatoes are golden and tender. 7. Optional: Squeeze lemon wedge over chicken before serving.
