1. Preheat your oven to 200°C (400°F). 2. In a bowl, mix together olive oil, oregano, thyme, salt, and pepper. 3. Brush the mackerel fillet with the herb mixture, ensuring it is well coated. 4. Place the mackerel on a lined baking tray and bake for 12-15 minutes or until the fish is cooked through and flaky. 5. Meanwhile, bring the vegetable broth to a boil in a small saucepan. 6.
