Herb-Crusted Lamb Chops

Steps

1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix together the chopped rosemary, thyme, minced garlic, olive oil, salt, and pepper. 3. Rub the herb mixture onto both sides of the lamb chops. 4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side. 5. Transfer the skillet to the preheated oven and cook for an additional 8-10 minutes for medium-rare, or longer if desired. 6. Remove the lamb chops from the oven and let them rest for a few minutes before serving.
