Steps

1. Preheat a grill or grill pan to medium-high heat. 2. Thread alternating cubes of halloumi and watermelon onto skewers. 3. Brush the halloumi cubes lightly with olive oil. 4. Grill the skewers for 1-2 minutes per side, until the halloumi is golden and the watermelon is lightly charred. 5. Transfer to a plate, drizzle with honey if desired, and sprinkle with cracked black pepper. 6. Garnish with fresh mint leaves and serve immediately.
