Steps

1. Rinse the rice under cold water until the water runs clear. 2. In a small pot, bring water to a boil, add rice and a pinch of salt, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender. 3. While the rice cooks, heat olive oil and butter in a skillet over medium heat. 4. Add minced garlic and sauté for 1 minute until fragrant. 5. Add sliced mushrooms, cook for 5-7 minutes until they release their juices and become golden. 6. Season with salt and pepper. 7. Fluff cooked rice with a fork and transfer to a serving bowl. 8. Top rice with garlic butter mushrooms and garnish with fresh parsley if desired.
