Classic Ham and Cheese Lettuce Sandwich with Herb Mayo

Steps

1. Slice each sandwich bread horizontally to open like a book. 2. Spread 15 g of plain mayonnaise evenly on the inner side of each bread slice. 3. Layer on each bread slice: 1 leaf of lettuce, a handful of spinach, 2 tomato slices, 40 g cheese, and 40 g ham. 4. Close each sandwich and cut diagonally into two halves. 5. Arrange the 4 sandwich halves diagonally on a rectangular or bistro-style plate. 6. Place the potato chips to the left side of the plate. 7. Add a dollop or brushstroke of herb mayonnaise to the right side of the plate. 8. Sprinkle finely chopped parsley over the sandwich surface for garnish.
