Steps

1. In a skillet, sauté the diced onion and minced garlic until softened. 2. Add the curry powder and stir for a minute. 3. Pour in the coconut milk and vegetable broth, bring to a simmer. 4. Slice the ripe banana and add it to the curry mixture. Cook for a few minutes until the banana is heated through. 5. In a separate pot, combine basmati rice, water, and a pinch of salt.
