Apple-Stuffed Pork Chops

Steps

1. Preheat the oven to 375°F (190°C). 2. In a bowl, mix together the diced apple, breadcrumbs, minced onion, minced garlic, chopped parsley, salt, and pepper. 3. Cut a pocket into each pork chop, being careful not to cut all the way through. 4. Stuff each pork chop with the apple filling, pressing it in tightly. 5. Heat the olive oil in an oven-safe skillet over medium-high heat. 6. Sear the stuffed pork chops for 2-3 minutes on each side, until browned. 7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C). 8. Remove from the oven and let the pork chops rest for a few minutes before serving.
