African Beef and Chicken Stew with Plantain and Carrots

A hearty and healthy African-inspired stew combining tender beef, chicken, and sweet plantains (ripe bananas), enriched with garlic and carrots for a flavorful and nutritious one-pot meal.

Steps

1. Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, sauté until translucent. 2. Add diced beef and chicken to the pot. Brown evenly on all sides. 3. Stir in ground coriander and smoked paprika. Cook for 1 minute to release aromas. 4. Add sliced carrots, banana, and chicken broth. Season with salt and pepper. 5. Bring to a boil, then reduce heat to low and cover. Simmer for 30 minutes until meat is tender and carrots are soft. 6. Adjust seasoning if needed. Garnish with fresh parsley before serving.
