Stir-Fried Potatoes with Bell Peppers

Steps

1. Heat the vegetable oil in a frying pan over medium heat. 2. Add the sliced potatoes and cook, stirring occasionally, until they start to turn golden and become tender, about 8 minutes. 3. Add the sliced onions and minced garlic to the pan; sauté for 2-3 minutes until fragrant. 4. Add the sliced bell peppers, smoked paprika, salt, and pepper. 5. Stir-fry everything together for another 5 minutes until the peppers are tender but still crisp. 6. Adjust seasoning to taste. 7. Garnish with chopped fresh parsley if desired and serve hot.
