Steps
1. Pat the chicken thigh dry and season with salt, pepper, and thyme.
2. Heat olive oil in a skillet over medium heat.
3. Add the chicken thigh, skin side down, and cook for 5-7 minutes until the skin is crispy and golden.
4. Flip the chicken and add minced garlic; cook for 1 minute.
5. In a small bowl, mix jam and soy sauce.
6. Brush the jam mixture over the chicken and cook for an additional 5 minutes until the chicken is cooked through and the glaze is sticky.
7. Remove from heat and let rest for 2 minutes before serving.
