Steps

1. Hard boil the eggs by placing them in boiling water for 10 minutes. Cool under cold running water and peel. 2. Cut the eggs in half lengthwise and carefully remove the yolks. 3. In a bowl, mash the yolks with mayonnaise, Dijon mustard, lemon juice, salt, and pepper. 4. Fold in the smoked Nero blue cheese gently, reserving a little for garnish. 5. Spoon the mixture back into the egg white halves. 6. Garnish with reserved blue cheese crumbles and finely chopped fresh chives. 7. Chill for 10 minutes before serving for best flavor.
