Steps
Preheat your oven to 375°F (190°C).
In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Rub the herb mixture all over the rabbit leg and place it in a baking dish.
Toss the mixed vegetables with balsamic vinegar, salt, and pepper, then add them to the baking dish.
Roast in the oven for 35-40 minutes, or until the rabbit is cooked through and the vegetables are tender.
Remove from the oven and let rest for 5 minutes.
Garnish with fresh parsley before serving.
