Steps

1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix the olive oil, rosemary, thyme, minced garlic, salt, and pepper to create a marinade. 3. Rub the marinade over the lamb chops, ensuring they are well coated. 4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned. 5. Transfer the chops to a baking dish and bake in the oven for 10-12 minutes for medium rare. 6. While the lamb is cooking, boil the diced potato in salted water until tender, about 15 minutes. 7. Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, and salt, then mash until smooth. 8.
