Stir in the cold water and lemon juice until the dough comes together. 4. Knead gently on a floured surface for about 1 minute until smooth. 5. Roll the dough into a rectangle, then fold it into thirds like a letter. 6. Chill in the refrigerator for 30 minutes. 7. Roll out again into a rectangle, fold, and chill for another 30 minutes. 8. Preheat the oven to 400°F (200°C). 9. Roll out the dough one last time, then cut into triangles. 10. Roll each triangle from the base to the tip to form a croissant shape. 11. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
