Steps
1. Start by grating the large carrot into a bowl.
2. In another bowl, mix the grated carrot with cream cheese or shredded cheese, adding a pinch of salt and pepper to taste.
3. If using, spread hummus on one side of each slice of whole wheat bread.
4. Place a layer of lettuce on one slice of bread (if using) and then add the carrot and cheese mixture on top.
5. Top with the second slice of bread, hummus side down.
